Life’s Just Beachy

Like Vacation — Only Not

I Need Closure

Today is day 39 that my closet built-ins have been installed and they are still empty. Last Wednesday I turned the situation over to our lawyer and the owner was supposed to me call by the end of the day that Wednesday. He never did.

My lawyer asked me to be patient and wait and he would call again on Monday. He called today, and the owner said he would uninstall my closets and bring the refund check on Thursday at 9:00 a.m., finally after 41 days.

So, let’s take bets… who thinks the closets will still be there Thursday evening? This time however he asked just one thing of me. *snort* as if…

He would like for me to write a little note stating that the situation has been resolved. (of course, this is pending them actually uninstalling the cabinets and having the refund check on Thursday.) He needs this “written not of resolve” from me to satisfy the *BBB* complaint that I have against him. My lawyer said it was only fair. *snort*

I have decided that on Thursday I will not write the note until after I go to his bank and literally cash the check and have cash in my hand. Then I was thinking, it only seems fair to wait 41 days to send it. That is what he thought was fair.

Don’t you think that is fair?

Cookies for Breakfast

April23

I let Brother eat cookies for breakfast this morning. I am the coolest mom ever. I felt a tad bit guilty, until I remembered that these cookies were probably more healthy than any cereal he eats the rest of the week.

I can’t believe I’ve never posted these Flourless Peanut Butter Cookies on my recipe site. They are super easy and Yummy… sometimes I add a few small scoops of mini chocolate chips and some wheat germ (I bet ground flax would be good too.) I always cut the sugar back to 1/2 cup. These really pack a protein punch and more importantly, makes me a really cool mom!
